Dinner gets a lot of the attention during the holidays, but don’t forget about breakfast and lunch! Here are two delicious autumn recipes that are sure to be a hit this season.
Creamy Pumpkin Soup
• ¼ cup Simple Truth Organic Unsalted Butter
• 1 small onion, chopped
• 1 garlic clove, minced
• 2 teaspoons Simple Truth Organic Light Brown Sugar
• 2 cups Simple Truth Organic Chicken Broth
• 15-ounce can pumpkin
• 12-ounce can evaporated milk
• Dash Simple Truth Organic Ground Saigon Cinnamon
Melt butter in large saucepan. Add onion, garlic and sugar. Cook over medium heat about 2 minutes. Add broth and bring to a boil, stirring occasionally. Reduce heat to low and cook 15 minutes, stirring occasionally. Finally, add the pumpkin, evaporated milk and dash of cinnamon. Cook an additional 5 minutes. Remove from heat. Puree the mixture in a blender or food processor when cool enough (so it doesn’t melt the container). Return soup to saucepan. Heat again so soup can be served warm. Refrigerate any leftovers.
This soup is great when paired with artisan whole grain bread for dipping.
Flax Muffin in a Minute
In a coffee mug (not cup), mix ¼ cup flax meal, ½ teaspoon baking powder, ½ teaspoon Simple Truth Organic Stevia Extract blend and 1 teaspoon Simple Truth Organic Ground Saigon Cinnamon. Stir in one Simple Truth Egg (any variety) and 1 teaspoon Simple Truth Coconut oil. Mix well.
Microwave the mug for 45 to 60 seconds (depending on the wattage of your microwave). The top should be set but still look moist.
Invert the mug to release the muffin. Enjoy! Serve with apple butter or pumpkin butter and a fresh brewed cup of tea or warmed apple cider for an instant fall favorite.
