Ingredients

2 1/2 cups Simple Truth Old Fashioned Oats
3/4 cup Simple Truth Slivered Raw Almonds
1/2 cup shredded coconut
1/2 teaspoon ground cinnamon
Pinch salt
1/2 cup Simple Truth Organic Maple Syrup
1/4 cup Simple Truth Organic Refined Coconut Oil, melted
1/4 teaspoon almond extract
1 tablespoon vanilla extract

Directions

  1. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the oats, almonds, coconut, cinnamon, and salt in a large bowl. Set aside.
  3. In a medium bowl, whisk the maple syrup and coconut oil together until combined.
  4. Whisk in the almond and vanilla extracts.
  5. Pour over the oats and toss to coat.
  6. Spread onto the baking sheet and bake for 45 minutes, stirring every 15 minutes.
  7. Allow granola to cool completely on the rack.
  8. Store in an airtight container at room temperature for up to 3 weeks.
