Turkey Reuben Sandwich

Ingredients

1 1/2 cups shredded cabbage
1/4 cup Thousand Island dressing
1 tablespoon mayonnaise
2 teaspoons Dijon mustard
8 slices rye bread
1/2 pound thinly Simple Truth Natural Oven Roasted Turkey Breast 
4 slices Swiss cheese
1 tablespoon Simple Truth Organic Unfiltered Olive Oil
 

Directions

  1. Combine cabbage with thousand island dressing and mayonnaise in a medium bowl. Mix until blended and set aside.
  2. Spread mustard on half of the bread slices. Divide turkey and cabbage mixture on top. Add cheese slices and top with remaining slices of bread.
  3. Heat oil in a large nonstick skillet over medium heat and cook sandwiches for 2 to 3 minutes per side or until the bread is golden brown and cheese is melted.
