Toasted Almond and Fresh Mozzarella Sandwiches

Ingredients

1 cup Simple Truth Organic Whole Raw Almonds
1 lemon, juiced and zested
1/4 cup Simple Truth Organic Unfiltered Olive Oil , plus more for toasting
1 1/2 teaspoons Simple Truth Organic Sage 
coarse salt and freshly ground pepper, to taste
8 slices Simple Truth Organic 100% Whole Wheat Bread 
1 8 ounce fresh mozzarella ball, sliced

Directions

  1. In a food processor, pulse nuts until coarsely chopped. Zest the lemon and add it into food processor. Add olive oil, lemon juice, sage and salt and pepper and process until mixture forms a paste.
  2. Spread paste on half of the bread slices. Top with mozzarella slices and sprinkle with salt and pepper. Cover with remaining bread slices and brush tops with olive oil.
  3. In a large nonstick skillet over medium-high heat, cook sandwiches, oiled side down, until bread is crusty on the bottom, about 3 minutes. Brush tops with oil and turn sandwiches over. Cook until brown and crusty on the bottom, pressing to compact, about 3 minutes more. (If necessary, work in batches.)
