Sweet Potato Latkes with Cumin Sauce

Ingredients

1 1/2 pounds sweet potatoes, peeled
1 gala apple
2 eggs
1/4 cup Simple Truth Organic 2% Reduced Fat Milk
1/3 cup matzah meal or flour
1 teaspoon baking powder
1/4 teaspoon garlic
1/4 teaspoon Simple Truth Organic Ground Cumin
1/8 teaspoon fresh ginger
1/4 teaspoon cayenne
1 teaspoon Simple Truth Organic Curry Powder
3 tablespoons peanut oil
2 green onions, chopped

SAUCE
1/2 cup Simple Truth Organic Nonfat Plain Greek Yogurt
1 garlic clove, minced
1 tablespoon chives, more for garnish
1/4 teaspoon ground cumin
1/8 teaspoon salt
1/8 teaspoon ground black pepper

Directions

  1. Grate sweet potatoes and apple. Remove any excess moisture (you can use a cheesecloth or paper towels and squeeze out moisture). Beat eggs and add one at a time, mixing well. Add milk. Add matzah meal (or flour) and baking powder. Add garlic. Cumin, ginger, cayenne pepper and curry powder and mix well.
  2. In a large skillet, heat oil until hot and add a large spoonful for each pancake. Depress with back of spoon slightly. Cook until brown and flip.
  3. To make the sauce: in a medium bowl, combine yogurt, garlic, chives, cumin and salt and pepper. Dollop sauce onto pancakes to serve. Garnish with chives.
