Stuffed Pasta Shells

Ingredients

1 12-ounce box large pasta shells
3 1/2 cups Simple Truth Organic Ricotta Cheese 
2 cups shredded mozzarella cheese
3/4 cup Parmesan cheese, grated, more for sprinkling
2 large Simple Truth Organic Brown Large Eggs 
2 tablespoons Italian parsley, chopped
3/4 teaspoon dried oregano
Coarse salt and freshly ground pepper, to taste
2 cups Simple Truth Organic Marinara Pasta Sauce 

Directions

  1. Preheat oven to 375 degrees.
  2. Cook pasta according to directions and drain. Cool in a single layer on waxed paper.
  3. In large bowl, mix together ricotta, mozzarella and the Parmesan cheese. Add the eggs, parsley, oregano and salt and pepper. Fill shells with about 2 tablespoons cheese mixture.
  4. Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish. Place filled shells (cheese side down) in prepared baking dish. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes. Serve sprinkled with extra Parmesan.
