Spinach Lasagna Rollups

Ingredients

8 lasagna noodles
4 cups Simple Truth Organic Baby Spinach 
2 cups Simple Truth Ricotta Cheese
1/2 cup Parmesan cheese, grated
2 Simple Truth Organic Brown Large Eggs, beaten
1 tablespoon Italian parsley, chopped
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
coarse salt and freshly ground pepper, to taste
3 cups Simple Truth Organic Marinara Pasta Sauce, divided

Directions

  1. Preheat oven to 375 degrees.
  2. In a large pot of boiling salted water, cook lasagna noodles until just cooked but still firm to the bite. Drain. Place noodles on wax paper and pat dry.
  3. In a large bowl, combine the spinach, ricotta, Parmesan, eggs, parsley, Italian seasoning and red pepper flakes, and mix well. Season with salt and pepper. Spread half of the marinara sauce over the bottom of a baking dish 8 x 8 baking dish.
  4. Spread about 1/3 cup of the ricotta mixture over one noodle. Starting at the short end, roll the noodle. Arrange seam side down in the prepared dish and repeat with the remaining noodles. Drizzle with the remaining sauce and bake for 30 minutes or until hot and bubbly.
