Spicy Green Chile Corn Chowder

Ingredients

3 tablespoons Simple Truth Organic Salted Butter
1 large white onion, diced
2 stalks Simple Truth Organic Celery Hearts, diced
1 clove garlic, minced
2 medium Yukon gold potatoes, peeled, cut into 1 inch chunks
5 cups Simple Truth Organic Chicken Broth
2 bay leaves
1 teaspoon ground cumin
1/2 teaspoon dry oregano
1 teaspoon coarse salt
4 cups Simple Truth Organic Cut Corn
2 4 ounce cans of green chiles
1 cup heavy cream
1/2 teaspoon black pepper

Directions

  1. Melt butter in a 5 to 6 quart heavy-bottomed pot on medium high heat. Once the butter is melted, add the onions and the celery, stir to coat with the butter. Cook for 8 to 10 minutes, lowering the heat to medium, until the onions and celery are soft.
  2. Once the onions and celery are beginning to brown, add the garlic and cook for a minute more. Add the potatoes and the broth to the pot. Add the bay leaves, cumin, oregano, and salt. Increase heat and bring to a simmer. Lower heat to maintain a simmer and cook for 8-10 minutes until the potatoes are just cooked through.
  3. Add the corn kernels to the pot and cook for 4 to 5 minutes, until cooked through. Add the green chiles to the pot.
  4. Remove the bay leaves. Stir in the cream. Add black pepper, more or less to taste.

    NOTE: if you want a thicker soup, take 1/2 of the soup and place in the blender to puree and add back into the soup.
