Southwestern Chicken and Black Bean Soup

Ingredients

2 boneless, skinless chicken breasts
2 tablespoons taco seasoning
coarse salt and freshly ground pepper, to taste
2 tablespoons olive oil
3 1/2 cups Simple Truth Organic Chicken Broth
1 15-ounce can Simple Truth Organic Black Beans, rinsed and drained
1 cup Simple Truth Organic Cut Corn
1/2 cup Simple Truth Organic Mild Salsa
1/4 cup sour cream
1/4 cup fresh cilantro, chopped

Directions

  1. Cut chicken into cubes and season with taco seasoning.
  2. Add oil to large soup pot and heat over medium-high heat. Add chicken; sauté 3-4 minutes or until chicken is lightly browned. Add broth, scraping pan to loosen browned bits.
  3. Place beans in a small bowl; mash until only about 1/4 of the whole beans remain. Add beans, corn and salsa to pan, stirring well. Bring to a boil. Reduce heat; simmer 15 minutes or until slightly thick. Serve with sour cream and cilantro.
