1 1/2 cups Simple Truth Organic® Quinoa
1 1/2 cups Simple Truth Organic® Black Beans
1 1/2 cups roasted corn (cut from about 2 large ears)
1/3 cup finely chopped red bell pepper
1 roasted poblano pepper, seeded and minced
6 Tbsp. fresh lime juice
1 tsp. salt
1 1/4 tsp. Simple Truth Organic® Ground Cumin
In a bowl, wash quinoa in at least 5 changes of cold water, rubbing grains and letting them settle before pouring off most of the water, until water runs clear. Drain in a large, fine sieve.
Cook quinoa according to package directions.
Transfer quinoa to a large bowl and cool. Add beans, corn, bell pepper, poblano pepper and cilantro and toss well.
Make dressing: In a small bowl, whisk together lime juice, salt and cumin, and add oil in a stream, whisking.
Drizzle dressing over salad and toss well with salt and pepper to taste.
Salad can be made 1 day ahead and chilled, covered. Bring salad to room temperature before serving.
Refrigerate any leftovers.
