2 32-oz. packages Simple Truth Organic® Chicken Broth

2 boneless, skinless Simple Truth® Organic Chicken Breasts, diced

1/2 cup rice

Juice of 1 lemon

1 tsp. ground pepper

2 cups Simple Truth Organic® Fresh Baby Spinach

  1. Empty the chicken stock into a sauce pot. Turn to medium-high heat.

  2. Dice the raw chicken into chunks small enough to fit on a soup spoon. Add the chicken to the broth and cook for 5 minutes.

  3. When the chicken is cooked to an internal temperature of 165° F, add the rice to the pot. Reduce the heat to medium-low and put a lid on the soup. Let sit 20 minutes.

  4. After 20 minutes, add the lemon juice and pepper. Ladle the soup into bowls, top with a handful of fresh baby spinach and serve! Refrigerate any leftovers.
