Smoked Salmon Crostini

Ingredients

1 Baguette, thinly sliced diagonally
1 teaspoon Simple Truth Organic Extra Virgin Olive Oil
2 teaspoons freshly ground pepper
1/3 cup Marscapone cheese
2 tablespoons Simple Truth Organic 2% Reduced Fat Milk
Zest and juice of one lemon
Coarse salt to taste
2 tablespoons fresh Simple Truth Organic Dill Weed, chopped
1/2 pound, very thinly sliced smoked salmon

Directions

  1. Preheat oven to 375 degrees.
  2. Brush both sides of bread with oil and toast in the oven for 10 minutes, cool and store in ziptop bag.
  3. Combine pepper, marscapone, milk, lemon zest and juice in a mixing bowl and beat until smooth. Season with salt.
  4. On each slice of bread, spread a dollop of the lemon cream, dill and mound of salmon. Serve.
