Slow Cooker Sausage and Pepper Casserole

Ingredients

12 Simple Truth Organic Brown Large Eggs 
3/4 cup Simple Truth Organic Half&Half
1/2 teaspoon crushed red pepper flakes
Coarse salt and freshly ground pepper, to taste
2 cups shredded cheddar cheese
8 green onions, chopped
1 bag Simple Truth Shredded Potatoes
1 pound bulk pork sausage, cooked, drained
1 cup red bell pepper, cored and chopped

Directions

  1. Spray a slow cooker with cooking spray
  2. In medium bowl, beat eggs, half-and-half, pepper flakes, salt and pepper with whisk.
  3. Reserve 3/4 cup cheddar cheese and 2 tablespoons green onions; set aside. In small bowl, stir together remaining cheese.
  4. Layer half of the potatoes, sausage, peppers, remaining green onions and cheese in slow cooker. Repeat layers. Pour egg mixture over layers.
  5. Cover; cook on Low heat setting 4 to 5 hours or on High heat setting 2 1/2 to 3 hours or until egg mixture is set.
  6. Sprinkle reserved cheese and green onions over top of casserole.
  7. Cover; cook 10 minutes longer or until cheese is melted.
  8. Remove foil before serving by loosening edges with knife.
