Ingredients

1 boneless pork shoulder (2 1/2 pounds), trimmed of fat, cut into 1-inch pieces
2 teaspoons Simple Truth Organic Ground Cumin
coarse salt and freshly ground pepper, to taste
1 tablespoon olive oil
1 cup Simple Truth Organic Chicken Broth
4 tomatillos, chopped
1 yellow onion, chopped
4 cloves garlic, finely chopped
2 cans Rotel tomatoes with chiles
1 tablespoon Simple Truth Organic Granulated Sugar
2 15.5 ounce cans white hominy, drained and rinsed
Sour cream
Simple Truth Organic Cilantro, chopped
Sliced jalapeño chiles

Directions

  1. Spray 5- to 6-quart slow cooker with cooking spray.
  2. Sprinkle pork with 1 teaspoon of the cumin, the salt and pepper.
  3. In 12-inch skillet, heat oil over medium-high heat.
  4. Add half of the pork; cook about 6 minutes, stirring occasionally, until browned on all sides.
  5. Remove pork with slotted spoon; place in slow cooker.
  6. Repeat with remaining pork.
  7. Add broth to skillet; cook 1 minute, scraping to loosen brown particles.
  8. Pour into slow cooker.
  9. Place tomatillos in food processor.
  10. Cover; process until smooth.
  11. Add to slow cooker.
  12. Stir in onion, garlic, Rotel tomatoes, sugar and remaining 1 teaspoon cumin.
  13. Cover; cook on Low heat setting 6 hours.
  14. Stir hominy into slow cooker.
  15. Cover; cook 1 hour longer.
  16. Garnish individual servings with sour cream, cilantro and jalapenos, if desired.
