Sausage and Onion Artisan Pizza

Makes 2 10" pizzas

Ingredients

CRUST
2/3 cup lukewarm water
1 teaspoon sugar
1 teaspoon active dry yeast
1 tablespoon olive oil
2 cups Simple Truth Organic Flour
1 teaspoon kosher salt

TOPPING
1 tablespoon Simple Truth Organic Salted Butter
1 sweet onion, peeled, halved, and sliced thin
1/2 pound mild ground Italian Sausage
8 ounces Simple Truth Organic Sliced Baby Bella Mushrooms 
1 cup pizza sauce
1 1/2 cups shredded mozzarella cheese
4 green onions, chopped for garnish

Directions

  1. To make dough: In a large mixing bowl, stir the sugar into the water until dissolved.
  2. Sprinkle with yeast and let sit for 2-3 minutes, until foamy.
  3. Stir together, adding the olive oil.
  4. In a medium mixing bowl, sift together the flour and salt.
  5. Add to the wet ingredients and stir to combine.
  6. Using floured hands, knead until a smooth ball forms.
  7. Transfer to an oiled bowl and turn to coat.
  8. Cover loosely with a clean towel and set in a warm place to rise for at least 1 hour.
  9. In the meantime; melt butter in a large skillet over medium heat.
  10. Add onion slices; stir to separate the slices into individual pieces.
  11. Add mushrooms to skillet and cook until onions just begin to brown and mushrooms are tender, about 5 minutes stirring occasionally.
  12. Reduce heat to medium-low and cook until onions are tender and caramelized, about 15 to 20 minutes.
  13. Remove to a bowl; set aside.
  14. Preheat oven to 500 degrees.
  15. Using the same skillet, add Italian sausage and return heat to medium.
  16. Cook until sausage is browned and cooked through, about 5 to 8 minutes.
  17. Drain; set aside.
  18. When ready to prepare pizzas, divide dough into two even pieces to make two 10-inch pizzas and place on baking sheet or pizza stone.
  19. Use a fork and prick all over and brush with olive oil.
  20. Bake dough for 5 minutes.
  21. Carefully remove crust from oven.
  22. Top with a thin layer of pizza sauce to within ½-inch of the dough edge.
  23. Top with sausage and almost all the onions and mushrooms.
  24. Sprinkle pizza evenly with cheese, and the remaining onion/mushroom mixture.
  25. Bake for another 8 to 12 minutes until cheese is bubbly, crust edges are golden brown and bottom is crispy.
  26. Garnish with green onions.
  27. Let cool slightly before cutting.
