Roasted Broccoli and Pecans

Ingredients

1 medium bunch broccoli, including stems
1/4 cup Simple Truth Organic Extra Virgin Olive Oil
coarse salt and freshly ground pepper, to taste
1/4 cup Simple Truth Raw Pecan Pieces, chopped

Directions

  1. Cut the tough ends from the broccoli spears.
  2. With a peeler (or a paring knife), remove the tough outer layer of the stems to reveal the tender, lighter green flesh underneath.
  3. Slice the stems and heads into florets.
  4. In a roasting pan, combine broccoli, oil, salt and pepper, and pecans.
  5. Roast, stirring once, until tender, 20 to 25 minutes.
