4 Simple Truth Boneless Skinless Chicken Breasts
2 cups pretzel crisps
1/4 cup Simple Truth Organic Refined Coconut Oil
1/2 cup Dijon mustard
1/4 cup water
3 tablespoons red wine vinegar
Coarse salt and freshly ground pepper, to taste
Preheat the oven to 400 degrees.
Place the pretzel crisps in a plastic bag and using a rolling pin, break them up. You should have coarse and fine crumbs.
Place the chicken breasts between two sheets of plastic wrap and, using a mallet, pound down and cut into 1 1/2-inch cubes
Transfer the crumbs to a large plate and set aside.
In a small bowl, mix the oil, Dijon mustard, water, and vinegar and whisk until smooth. Season with salt and pepper. Reserve half of the mustard mixture.
Using a basting brush, brush the Dijon mixture over both sides of the chicken.
Next, dredge the chicken in the pretzel crumbs and transfer to a rimmed baking sheet coated with cooking spray. (You can lightly coat the chicken bites to "adhere" the breading).
Bake in the upper third of the oven for 10-15 minutes, or until thoroughly cooked, turning once.
Serve chicken bites with toothpicks and the reserved mustard.
