Ingredients

4 large eggs
4 large eggs whites only
1/2 cup cottage cheese
1/2 cup Simple Truth Old Fashioned Oats
1/4 cup wheat germ
1/4 cup flax seeds
1 teaspoon baking powder
1 tablespoon Simple Truth Organic Refined Coconut Oil
1 teaspoon Simple Truth Organic Ground Saigon Cinnamon
Cooking spray
1 cup strawberries hulled and sliced
1/2 cup Simple Truth Organic Maple Syrup

Directions

  1. Combine eggs, egg whites, cottage cheese, oats, wheat germ, flax seeds, baking powder, oil and cinnamon and lightly blend with a mixer. Heat griddle or large skillet over medium heat and spray with cooking spray. Ladle mixture by 1/4 cupful and cook until both sides are browned.
  2. Top pancakes with strawberries and drizzle with syrup and serve.
