Ingredients

4 frozen Simple Truth Meatless Burgers
2 tablespoons Simple Truth Organic Refined Coconut Oil
1 white onion, thinly sliced
1 cup Simple Truth Organic Sliced White Mushrooms
1 yellow bell pepper, cored, seeded and thinly sliced
4 kaiser rolls, split
4 slices Simple Truth Provolone 

Directions

  1. Grill the burgers for 8-9 minutes, turning once.
  2. Heat the oil in a large skillet over medium heat.
  3. Add the onion, mushrooms and pepper slices and sauté for 5 minutes, or until crisp-tender.
  4. Remove from the heat.
  5. When the burgers are done, transfer them to a microwave-safe plate.
  6. Toast the cut sides of the buns for about 30 seconds or until golden.
  7. Top each burger with the onion mixture, add a slice of cheese and heat in the microwave for a few seconds, just until the cheese melts.
  8. Top the buns with the burgers and serve.
