Parmesan Chicken Burgers

Ingredients

1/2 cup breadcrumbs
1/2 cup shredded Parmesan cheese
1/4 cup fresh Simple Truth Organic Basil, finely chopped
1 cup Simple Truth Organic Marinara Pasta Sauce, divided
1 pound ground chicken
1 tablespoon Simple Truth Organic Unfiltered Olive Oil
1/4 white onion, finely diced
Coarse salt and freshly ground pepper, to taste
1/2 8-ounce fresh mozzarella ball
4 Kaiser rolls, sliced
1 cup Simple Truth Organic Baby Spring Mix 
Cooking spray

Directions

  1. Place breadcrumbs, Parmesan and basil in a small bowl and mix until thoroughly combined. Reserve half of mixture and place other half onto a shallow dish.
  2. Mix 3/4 of marinara in a small saucepan; heat until warm over low heat, stirring occasionally. Place the remaining marinara into a large bowl. Add chicken, oil, onion, reserved crumbs mixture and salt and pepper. Mix until thoroughly combined.
  3. Shape chicken mixture into thick patties; carefully dredge both sides in crumbs on shallow dish, to form a thin coating.
  4. Heat a little oil in large skillet over medium heat. Cook patties until bottom sides are crisp and brown, about 4-5 minutes. Gently flip patties and cook 2 minutes more. Thinly slice the cheese and top the burgers with cheese slices, cover pan, and cook 2 more minutes, until patties are cooked through and cheese is melted. Lightly toast rolls while chicken cooks.
  5. Spread a thin coating of marinara-basil sauce onto rolls. Top each slice with a burger and some of the greens. Pour remaining sauce into ramekins and serve as a dip on the side.
