Ingredients

1 Simple Truth Organic Brown Grade AA Egg , beaten
1 tablespoon milk
1 cup panko breadcrumbs
4 Simple Truth Boneless Skinless Chicken Breasts
coarse salt and freshly ground pepper, to taste
1 cup Simple Truth Organic Basil, torn
2 cups shredded mozzarella
½ cup olive oil
1 cup Simple Truth Organic Marinara Pasta Sauce

Directions

Preheat oven to 375 degrees.

  1. In a wide bowl, mix the eggs and milk. Place the breadcrumbs on a plate.
  2. Using a sharp knife, make a slit into the chicken as big as possible, careful not to cut through the bottom. Season the chicken with salt and pepper.
  3. Stuff the mozzarella and basil inside the chicken breasts and close with a toothpick, if needed. Season with salt and pepper.
  4. Dip the chicken breasts into the egg mixture and roll in panko crumbs.
  5. Heat the oil in a large skillet over medium heat. Place the chicken breasts in the skillet and brown on both sides. Place on a baking sheet and bake for 35 minutes or until cooked through.
  6. Heat the sauce in the microwave and serve the chicken with marinara dipping sauce.
