Ingredients

2 tablespoons Simple Truth Organic Refined Coconut Oil
1/2 white onion, chopped
1 cup Simple Truth Organic Long Grain Brown Rice 
1 cup Simple Truth Organic Mild Salsa
1 cup Simple Truth Organic Vegetable Broth
1/2 teaspoon coarse salt

Directions

  1. Heat oil in a medium-sized saucepan over medium heat.
  2. Add onion and cook, stirring occasionally, until transparent, about 5 minutes.
  3. Add rice and cook, stirring frequently, until rice turns from transparent to milky white, between 3 and 5 minutes.
  4. Add salsa, broth, and salt.
  5. Bring to a boil and stir.
  6. Reduce heat to medium low and cover.
  7. Let cook for 20-25 minutes or until excess liquid is absorbed and rice is tender.
  8. Add more broth by 1/4 cups, if necessary.
