Ingredients

2 Simple Truth Boneless Skinless Chicken Breasts
coarse salt and freshly ground pepper, to taste
8 cups Simple Truth Organic Romaine Lettuce, chopped
1 English cucumber, sliced
1 cup kalamata olives
12 slices Genoa salami, cut in half
1/2 medium red onion, diced
1/2 cup red wine vinaigrette
1 teaspoon Greek seasoning
1/2 cup crumbled feta cheese, plus extra for garnish
2 Roma tomatoes, sliced, for garnish

Directions

  1. Season chicken breasts on both sides with salt and pepper. Heat oil in a large skillet over medium-high heat and add chicken. Cook for 6 minutes per side, or until the chicken is cooked through and no longer pink inside. Remove chicken and let rest for at least 10 minutes. Dice chicken into small pieces.
  2. In a large bowl, add diced chicken and Romaine, cucumber, olives, salami and red onion and set aside.
  3. In a sealable jar or container with a lid, combine red wine vinaigrette, Greek seasoning and crumbled feta cheese. Seal lid and shake vigorously.
  4. Pour dressing over salad and toss to combine. Divide among individual plates and garnish with extra crumbled feta cheese and sliced tomatoes.
