Mason Jar Taco Salad with Cilantro Lime Dressing

Ingredients

CILANTRO-LIME DRESSING
1 tablespoon apple cider vinegar
Juice from one lime
1/2 cup fresh cilantro, loosely packed
1/4 cup Simple Truth Organic Nonfat Plain Greek Yogurt 
1 teaspoon honey
Pinch of salt

SALADno
1/4 cucumber, diced
1/2 cup black beans, drained and rinsed
10 Simple Truth Organic Grape Tomatoes, sliced
1/4 cup Simple Truth Organic Cut Corn, thawed
1/2 cups romaine lettuce
1/4 avocado, diced
2 tablespoons shredded cheddar cheese
Side Simple Truth Blue Corn Tortilla Chips 

Directions

  1. Blend the ingredients for the salad dressing until smooth.
  2. Pour into the bottom of a quart-sized mason jar (wide-mouth works best for filling and eating out of).
  3. Then layer the ingredients in the order listed above — cucumbers, black beans, tomato, corn, greens, avocado, then cheese.
  4. Secure the lid, and store in the fridge for up to five days.
  5. You can also pack a small container of tortilla chips to crumble on top when you're ready to eat.
  6. These salads are portable but sometimes it's easier to pour into a bowl to eat!
