Ingredients

CRUST
⅔ cup lukewarm water
1 teaspoon Simple Truth Organic Granulated Sugar
1 teaspoon active dry yeast
1 tablespoon Simple Truth Organic Unfiltered Olive Oil
2 cups Simple Truth Organic Flour
1 teaspoon kosher salt
TOPPING
1/4 cup olive oil
1 tablespoon minced garlic
1/2 teaspoon kosher salt
8 Roma tomatoes, sliced
10 ounces shredded Mozzarella cheese
10 Simple Truth Organic Basil, leaves washed, dried and chopped
1/2 cup freshly grated Parmesan cheese

Directions

  1. To make dough: In a large mixing bowl, stir the sugar into the water until dissolved. Sprinkle with yeast and let sit for 2-3 minutes, until foamy. Stir together, adding the olive oil.
  2. In a medium mixing bowl, sift together the flour and salt. Add to the wet ingredients and stir to combine. Using floured hands, knead until a smooth ball forms. Transfer to an oiled bowl and turn to coat. Cover loosely with a clean towel and set in a warm place to rise for at least 1 hour.
  3. When ready to prepare pizzas, preheat oven to 450 degrees and divide dough into two even pieces to make two 10-inch pizzas and place on baking sheet or pizza stone. Use a fork and prick all over and brush with olive oil. Bake dough for 5 minutes. Carefully remove crust from oven.
  4. Meanwhile, stir together olive oil, garlic, and salt; toss with tomatoes, and allow to stand for 15 minutes.
  5. Brush each pizza crust with some of the tomato marinade. Sprinkle the pizzas evenly with half of the Mozzarella cheese. Arrange tomatoes on top, then sprinkle with basil and remaining Mozzarella and Parmesan cheese.
  6. Bake in preheated oven until the cheese is bubbly and golden brown, about 10 minutes.
