Harvest Salad with Balsamic Vinaigrette

Ingredients

2 Simple Truth Natural Boneless Skinless Chicken Breasts, cut into bite-size strips

VINAIGRETTE
1/2 cup olive oil
1/4 cup Balsamic vinegar
1 teaspoon garlic, minced
2 tablespoons brown sugar
coarse salt and freshly ground black pepper, to taste

SALAD
6 cups Simple Truth Organic Power Greens
2 medium tomatoes, sliced or cut into wedges
1 small red onion, thinly sliced or cut into thin wedges
1/2 cup Simple Truth Organic Celery Hearts, chopped
1/2 cup sliced or chopped cucumber
1/3 cup Simple Truth Walnuts Raw Halves & Pieces, toasted and coarsely chopped
1/3 cup dried cranberries

Directions

  1. Season chicken breasts on both sides with salt and pepper. Heat oil in a large skillet over medium-high heat and add chicken. Cook for 3 minutes per side, or until the chicken is cooked through and no longer pink inside. Remove chicken and let rest for at least 10 minutes. Cut chicken into bite-size strips and set aside.
  2. Prepare the Balsamic Vinaigrette. Cover and chill while preparing the salad.
  3. In a large salad bowl, combine greens, tomatoes, onion, celery, cucumber, walnuts and cranberries. Shake the vinaigrette; pour over the lettuce mixture. Toss gently to coat. Top with cooked chicken to serve.
