Ingredients

2 Simple Truth boneless skinless Chicken Breasts
1 tablespoon Simple Truth Organic Unfiltered Olive Oil
coarse salt and freshly ground pepper, to taste
1 head Simple Truth Organic Romaine Lettuce, torn
2 tomatoes, seeded and coarsely chopped
1/2 red onion, thinly sliced
1 cup kalamata olives, pitted
3/4 cup crumbled feta cheese
1/4 cup Simple Truth Organic Balsamic Vinaigrette Dressing

Directions

Preheat the oven to 350 degrees.

  1. Place the chicken breasts on a small, rimmed baking sheet or pie pan; drizzle with olive oil and sprinkle with salt and pepper. Bake uncovered for 20 minutes or until cooked through. Let cool and cut into very small cubes.
  2. Divide lettuce among individual plates; top with chicken, tomatoes, onion, olives and feta cheese. Pass dressing to serve.
