Grape Blue Cheese and Pecan Flatbread

Ingredients

2 whole wheat flatbreads
1 1/2 cups seedless red grapes, halved
1/2 cup crumbled blue cheese
1/4 cup Simple Truth Raw Pecan Pieces, chopped
1/4 cup balsamic vinegar
2 cups Simple Truth Baby Spinach, trimmed and chopped

Directions

  1. Preheat oven to 375 degrees.
  2. Place the flatbread on rack in the oven and bake for 3 minutes or until lightly browned.
  3. Remove the flatbread from oven and top with grapes, blue cheese and pecans.
  4. Place flatbread back on rack in oven and bake for 5 minutes or until cheese melts and crust is browned.
  5. Bring vinegar to a boil in a small saucepan.
  6. Cook 1 minute or until vinegar thickens and is reduced.
  7. Top the flatbread with spinach and drizzle with vinegar.
