Egg Sandwiches with Fig Jam

Ingredients

4 slices Simple Truth Bacon (Uncured Smoked) Bacon
1 white onion, sliced
4 Simple Truth Organic Brown Grade AA Eggs
Coarse salt and freshly ground pepper, to taste
2 tablespoons fig jam
1 cup Simple Truth Organic Baby Spinach 
4 focaccia rolls

Directions

  1. Cook bacon in a medium skillet over medium heat. Drain on paper-towel-lined plates.
  2. Reserve a little bacon grease and sauté the onion until soft, about 5 minutes. Transfer to a plate; reserve the skillet.
  3. Add the eggs to the skillet and cook, covered, 2 to 4 minutes for slightly runny yolks. Season with salt and pepper to taste.
  4. Divide the onion, fig jam, spinach leaves, and eggs among the rolls and serve.
