Spinach Pesto Pasta with Roasted Tomatoes

  1. Preheat oven to 375F. Toss whole tomatoes with olive oil. Place on baking sheet lined with parchment paper and roast for 35-40 minutes, stirring halfway through.
  2. When tomatoes are halfway done cooking, bring a large pot of salted water to a boil. Boil pasta according to package directions. Drain and set aside.
  3. Add spinach, basil, pine nuts, Parmesan cheese, garlic and salt to the bowl of a food processor. Process until combined. Stream in olive oil, scraping down the sides of the bowl as necessary.
  4. Toss pesto with pasta and roasted tomatoes. Serve hot.
