Mushroom Walnut Chickpea Burgers

1 tbsp. (plus more for cooking) Simple Truth Organic™ Extra Virgin Olive Oil 

½ medium onion (about ½ cup), diced

2 garlic cloves, minced

1-8oz pkg. Simple Truth Organic™ Whole Baby Bella Mushrooms, chopped

¼ cup walnuts

1-15oz can Organic Garbanzo Beans, drained

1/3 cup Simple Truth Natural Old Fashioned Rolled Oats

1 Simple Truth Organic™ Egg

½ tsp. salt

¼ tsp. Simple Truth Organic™ Thyme Leaves

Ground pepper, to taste

  1. Preheat oven to 350F. Place walnuts on a baking sheet with parchment paper. Toast walnuts for about 10 minutes, or until lightly browned.
  2. Heat oil in a medium pan over medium heat. Once hot, add onion and sauté for about 5 minutes. Add garlic and mushrooms and sauté for about seven minutes, stirring frequently. Remove from heat.
  3. Add walnuts to the bowl of a large food processor. Process until they reach a fine crumb.  Add garbanzo beans, oats, egg, salt, thyme and pepper. Process until the mixture is well combined, but not pureed.  Form mixture into 4 tightly packed patties.
  4. Drizzle a bit more oil in a medium pan over medium heat. Once hot, add burgers. Cook until browned, about 5-7 minutes. Flip and cook until browned on the other side.
  5. Serve on whole-grain buns or on a bed of greens.
