Crustless Quiche with Sausage and Cojack

Ingredients

2 russet potatoes
6 ounces breakfast sausage
1 tablespoon Simple Truth Organic Salted Butter 
1 teaspoon garlic, minced
1/2 teaspoon onion salt
4 cups Simple Truth Organic Spinach 
Cooking spray
Coarse salt and freshly ground pepper, to taste
8 large eggs
1/2 cup Simple Truth Organic 2% Reduced Fat Milk
2 dashes Simple Truth Organic Jalapeno Hot Sauce
1 tomato, coarsely chopped
1 cup shredded cojack

Directions

  1. Preheat oven to 425 degrees.
  2. Peel the potatoes and wrap in foil. Bake for 45 minutes to 1 hour or until cooked through. Let cool. Reduce heat to 375 degrees.
  3. Cook the sausage in a medium skillet over medium heat, breaking up large pieces, add oil, if needed. Set the sausage aside. Melt butter in a large skillet over medium heat. Add garlic and onion salt, and stir until fragrant, 1-2 minutes. Add spinach, and sauté 3-5 minutes until spinach is wilted, stirring occasionally.
  4. While spinach is cooking, coat deep dish pie plate with cooking spray. Slice potatoes into 1/2 inch rounds, and place in pie plate in a single layer, smashed close together so they serve as a crust. Line the sides of the pie plate with slices (may need to cut slices in half), with the round edges up to form a scalloped crust. Season generously with salt and pepper.
  5. In a large bowl combine eggs and milk and whisk until well combined. Add hot sauce, tomatoes, spinach mixture, sausage, cheese and stir to combine. Pour into pie plate and season with salt and pepper. Bake 35-40 minutes or until center is set. Remove from oven, let set for five minutes, slice and enjoy!
