Ingredients

8 slices Simple Truth Bacon (Uncured Smoked)
8 slices white bread
1 avocado, pitted and thinly sliced
1 tomato, thinly sliced
1 cup Simple Truth Grilled Chicken Breast Strips , thawed
1/2 cup ranch dressing
2 Simple Truth Grade A Cagefree Large White Eggs, hard boiled and chopped
4 blue cheese slices
1 cup Simple Truth Organic Baby Spring Mix

Directions

  1. Cook the bacon in a medium skillet over medium heat until crisp. Cool on a plate lined with a paper towel.
  2. Lightly toast the bread.
  3. Divide avocado among 4 bread slices and top with the bacon, tomato and chicken. Top with eggs and drizzle with ranch dressing then add the blue cheese slices and lettuce.
