Ingredients

1 tablespoon garlic, minced
1/2 cup pitted prunes, halved
1/2 cup large pitted green olives
2 tablespoons capers, with liquid
2 tablespoons olive oil
2 tablespoons rice vinegar
1 bay leaf
1 tablespoon dried oregano
Coarse salt and freshly ground pepper, to taste
4 bone-in Simple Truth Boneless Skinless Chicken Breast, skin on
1/2 cup Simple Truth Organic Brown Sugar
1/4 cup dry white wine
1 5.8-ounce package couscous (garlic flavored)

Directions

  1. In a medium bowl, combine garlic, prunes, olives, capers, olive oil, vinegar, bay leaf, oregano and salt and pepper and mix well. Spread mixture in the bottom of a baking dish. Add chicken, stir and turn to coat. Cover and refrigerate all day.
  2. Remove dish from refrigerator. Sprinkle brown sugar on top and pour white wine all around chicken.
  3. Preheat oven to 400 degrees.
  4. Bake until chicken is cooked through, 1 hour. Use a baster to distribute juices several times while cooking.
  5. 15 minutes before the chicken is done, cook couscous according to package instructions. Serve the chicken with couscous and garnish the plate with extra olives and prunes. Moisten the couscous with extra pan sauce, if needed.
