Broiled Mozzarella and Tomato Bruschetta

Ingredients

1/2 Simple Truth Organic Country Italian Batard 
4 tablespoons Simple Truth Organic Extra Virgin Olive Oil
1 teaspoon garlic, minced
Coarse salt and freshly ground pepper, to taste
1 tomato, cored, seeded and chopped
2 green onions, chopped
1 cup shredded mozzarella cheese

Directions

  1. Preheat the broiler.
  2. Cut the bread in half crosswise, then slice in half lengthwise. Place the pieces of bread cut side up on a baking sheet.
  3. In a small bowl, stir together the olive oil and garlic. Brush the oil over the cut sides of the bread. Sprinkle lightly with salt and pepper. Place under the broiler for 3 to 5 minutes -- until just lightly toasted. Remove from oven.
  4. Stir together the tomatoes and green onions. Sprinkle over the toasted side of the bread and then sprinkle with the shredded cheese. Return pan to the oven and broil just until the cheese melts and begins to bubble, about 2 to 4 minutes. Cut bruschetta into sections and serve immediately.
