  1. Preheat oven to 350F. Spray baking sheet with cooking spray (or line with parchment paper) and set aside.
  2. Add all ingredients to a large food processor (except chocolate chips). Process for a full two minutes. The batter should be very smooth. Stir in optional chocolate chips.
  3. Spoon batter onto cookie sheet.  It will be very wet and sticky, unlike traditional cookie dough. You should have about 16 cookies.
  4. Bake for 13-15 minutes, or until bottoms of cookies are lightly browned.
