Nutty Cranberry Quinoa Granola

  1. Preheat oven to 300F. Line a cookie sheet with parchment paper and set aside.
  2. Place coconut oil in a small bowl. Microwave for about 45 seconds, or until melted. Stir in honey and set aside to cool. 
  3. In a large bowl, mix together oats, dry quinoa, pumpkin seeds, chopped almonds, chia seeds, cinnamon and salt. Set aside.
  4. Add vanilla and egg white to cooled oil and honey mixture and whisk until combined. Pour mixture into dry ingredients and stir well to combine.
  5. Pour granola onto prepared baking sheet. Spread in an even layer using a spatula.
  6. Bake for about 35 minutes, stirring every 10-15 minutes.
  7. Allow granola to cool before stirring in dried cranberries. Store in an airtight container.
