Ingredients

1 whole wheat flatbread
2 slices Simple Truth Bacon (Uncured Smoked) 
2 Simple Truth Grade A Cagefree Large White Eggs
1/2 cup Simple Truth Organic Grape Tomatoes, halved
4 green onions, chopped
2 tablespoons shredded Parmesan cheese, extra for topping

Directions

  1. Preheat oven to 200 degrees.
  2. Place flatbread on a small cookie sheet and warm in oven for 5 minutes. Remove and set aside.
  3. Meanwhile, in a small skillet, cook the bacon over high heat until cooked and crisp. Drain on a paper towel and when cooled, crumble. Remove all but 1 teaspoon of grease and fry eggs to desired doneness.
  4. To assemble pizza: layer crumbled bacon, tomatoes, green onions and cheese. Add eggs on top and sprinkle with a little more cheese.
  5. Heat in oven for 5 minutes, until heated through. Cut into 4 squares to serve.
