Black Bean Soup with Avocado

Ingredients

8 slices Simple Truth Bacon (Uncured Smoked), finely chopped
1 tablespoon olive oil
1 yellow onion, chopped
6 Simple Truth Organic Carrots, shredded (3 cups)
6 garlic cloves, finely chopped
2 cups Simple Truth Organic Chicken Broth
3 tomatoes, cored and finely chopped (1.5 cups)
2 tablespoons ketchup
2 teaspoons chili powder
5 15-ounce cans Simple Truth Organic Black Beans, drained but not rinsed
Coarse salt and freshly ground pepper, to taste
1 cup fresh cilantro, (1 bunch)
1 avocado, cubed
1 whole lime, juiced

Directions

  1. Place the bacon in a large heavy pot over medium heat and cook until it just starts to crisp. Remove to a paper towel-lined plate and drain all but a teaspoon of the bacon grease.
  2. Stir in the onion and carrots, stirring until they begin to turn translucent. Add the garlic and cook another 2-3 minutes.
  3. Add the broth, tomatoes, ketchup and chili powder. Stir in the beans, turn heat to med-high and bring to a boil - cook gently for 10 minutes. Season with salt and pepper, if desired.
  4. Chop cilantro and stir into the soup and cook an additional 5 minutes. Add lime juice. Top with avocado and serve.
