Ingredients

2 15-ounce cans Simple Truth Organic Black Beans, rinsed and drained
1 cup Simple Truth Organic Cut Corn
1/2 red onion, diced
1 cup Simple Truth Organic Black Bean and Corn Salsa, divided
Coarse salt and freshly ground pepper, to taste
Cooking spray
4 large whole wheat flour tortillas
1 cup shredded mozzarella cheese
1 avocado, pitted, peeled and diced
2 tablespoons Simple Truth Organic Cilantro, chopped

Directions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine beans, corn, onion, and half of the salsa. Season to taste with salt and pepper.
  3. Spray a rimmed baking sheet with cooking spray. Warm tortillas in the microwave between damp paper towels, for about 30 seconds.
  4. Divide filling and cheese among tortillas; roll up and place seam-side down on baking sheet.
  5. Bake burritos until heated through, 20 minutes.
  6. Serve with remaining salsa and sprinkled with diced avocado, cilantro and more cheese, if desired.
