Black Bean and Corn Relish

Ingredients

1 15-ounce can Simple Truth Organic Canned Spicy Black Beans, rinsed and drained
2 cups Simple Truth Organic Cut Corn, thawed
1/2 yellow onion, diced
1/2 jalapeño pepper, seeded and minced
1 tablespoon Simple Truth Organic Cilantro, chopped
2 Roma (or plum) tomatoes, chopped
3 tablespoons lime juice
Coarse salt and freshly ground pepper, to taste

Directions

  1. Mix together the beans, corn, onion, jalapeno, cilantro, tomato and lime juice in a medium bowl.
  2. Season with salt and pepper and chill until ready to serve.
