Beef Skewers with Apricot Dipping Sauce

Ingredients

1 1/2 pounds Simple Truth Natural Flatiron Steak
2 teaspoons garlic, minced
2 teaspoons dried basil
4 tablespoons Simple Truth Organic Extra Virgin Olive Oil
Coarse salt and freshly ground pepper, to taste

DIPPING SAUCE
3/4 cup apricot preserves
1 tablespoon Simple Truth Organic Shoyu Soy Sauce, or to taste
2 green onions, finely chopped
1 tablespoon lime juice, or to taste
1 dash Simple Truth Organic Chipotle Hot Sauce, or to taste
4 12-inch bamboo skewers, soaked for 20 minutes

Directions

  1. Heat the broiler to high heat and position the top rack to the second position.
  2. Line a rimmed baking sheet with foil.
  3. In a large bowl, combine the garlic, basil and oil. Season with salt and pepper.
  4. Cut the steak into 1 1/2 inch pieces. Add to the bowl with the garlic mixture and turn to coat. Thread beef onto skewers and place the skewers on the baking sheet. Broil (without turning) 4-6 minutes for medium-rare.
  5. Meanwhile, in a bowl, mix the apricot dipping sauce ingredients. Serve the skewers with the dipping sauce.
