Barbecue Chicken Salad

Ingredients

2 boneless, skinless chicken breasts
3/4 cup Simple Truth Organic BBQ Sauce , divided
cooking spray
3 tablespoon ranch dressing
1 cup Simple Truth Organic Cut Corn
1/2 teaspoon smoked paprika
6 wonton wrappers, sliced into strips
1 head Simple Truth Organic Romaine Lettuce, torn
1 can Simple Truth Organic Black Beans, rinsed and drained

Directions

  1. Place chicken breasts in a zip-top bag and cover with 1/4 cup barbecue sauce. Seal bag and allow to marinate for at least 30 minutes.
  2. Heat a grill pan (or skillet) lightly coated with cooking spray to medium high heat.
  3. In a small bowl, mix ranch dressing and 3 tablespoons barbecue sauce together to create dressing. Add more of each, to taste; set aside.
  4. Place chicken breast on grill pan. Grill six minutes per side, or until chicken is cooked through and juices run clear. Allow chicken to rest for 2-3 minutes, and then dice into small pieces.
  5. Meanwhile, add corn to grill pan. Sprinkle lightly with smoked paprika and grill until some kernels are slightly blackened.
  6. In a small skillet, lightly greased with cooking spray, add wonton strips. Cook until lightly browned and crispy, about 5 minutes, stirring occasionally; set aside.
  7. In a large serving bowl, add romaine, black beans, corn, wonton strips, and chicken. Add dressing and toss to coat. Drizzle additional barbecue sauce over individual servings. Serve immediately.
