1 pound Simple Truth Natural Pork Tenderloin
12 sprigs Simple Truth Organic Thyme Leaves
4 slices Simple Truth Bacon (Uncured Smoked)
2 fennel bulbs, cut into eighths
1 cup dried apricots, sliced in half
Heat oven to 425 degrees.
Pat the pork dry with paper towels. Season with salt and pepper. Top the pork with thyme and wrap it with the bacon. Heat about 1 tablespoon of oil in a large OVENPROOF skillet over medium-high heat. Add the pork and fennel. Season again with salt and pepper.
Cook the pork for 2 minutes per side. Add the apricots. Transfer skillet to oven and roast for 20 to 25 minutes. Let rest for 5 minutes. Slice the pork and serve with the fennel and apricots
