Bacon and Cheese Muffins

Makes 6-8 large muffins

Ingredients

6 slices Simple Truth Bacon (Uncured Smoked) 
Cooking spray
2 tablespoons butter
1/4 cup Simple Truth Organic Chives, minced
2 cups Simple Truth Organic Flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 eggs
1 cup Simple Truth Organic 2% Reduced Fat Milk 
1 1/2 cups cheddar cheese, shredded

Directions

  1. Cook bacon in a large skillet until crisp. Place bacon on a plate lined with paper towels to cool. Crumble. Save 2 tablespoons of the grease.
  2. Spray large muffin tins (use small if that's all you have and reduce the cooking time).
  3. Melt the butter in a small skillet over medium heat, remove from heat and add the chives.
  4. In a medium bowl, combine the eggs and milk. Add the butter/chive mixture to the eggs and gently combine.
  5. In another medium bowl, combine the flour, 2 tablespoons of reserved bacon grease, baking powder, salt and sugar. Add to the egg mixture and then add in the bacon and cheese. Stir to mix.
  6. Spoon the mixture into prepared baking tin, adding a little milk if needed to thin. The mixture should be slightly thick.
  7. Bake 20- 25 minutes, or until muffin tops just begin to brown. Remove from oven and remove muffins from tin. Cool them on a wire rack.
