Asian Salmon Bowl with Spinach

Ingredients

1 cup jasmine rice
1 tablespoon Simple Truth Organic Salted Butter
1 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
3 tablespoons Simple Truth Organic Maple Syrup
2 tablespoons lime juice
3 tablespoons Simple Truth Organic Shoyu Soy Sauce
1 teaspoon cornstarch
1 teaspoon water
4 salmon fillet(s) (6 ounces each), skin removed
1 teaspoon vegetable oil
6 cups Simple Truth Baby Spinach 
2 teaspoons black sesame seeds

Directions

  1. Preheat oven to 425 degrees.
  2. Cook rice according to package instructions.
  3. In a small saucepan, melt butter over medium heat.
  4. Add the garlic and pepper flakes and sauté until garlic is lightly golden, one minute.
  5. Add syrup, lime juice and soy sauce; cook until bubbling, 3 minutes.
  6. In a bowl, combine cornstarch and water; stir into garlic glaze. Cook until slightly thick, 1 minute.
  7. Arrange fillets on a foil-lined baking sheet. Spread a little glaze over each fillet. Roast until just cooked through, 12 minutes.
  8. In a medium skillet, warm oil over medium heat. Add spinach; sauté until just wilted. Remove from pan; set aside.
  9. Divide rice among individual bowls; top each with spinach and a salmon fillet.
  10. Drizzle with remaining sauce; sprinkle each with black sesame seeds.
