Asian Flatiron Salad

Ingredients

4 tablespoons Simple Truth Organic Refined Coconut Oil, plus more for brushing
4 tablespoons lime juice
2 tablespoons Asian fish sauce
4 tablespoons Simple Truth Organic Shoyu Soy Sauce 
1 teaspoon garlic, minced
1/2 serrano chile seeded and coarsely chopped
1 tablespoon ginger, minced
1.5 teaspoons sugar
Coarse salt and freshly ground pepper, to taste
1 pound Simple Truth Natural Flatiron Steak 
4 cups Simple Truth Organic Baby Spring Mix
1 cup cherry tomatoes halved
1 cucumber peeled, halved, seeded and sliced
1/2 red onion thinly sliced
2 green onions thinly sliced

Directions

  1. In a blender, combine the oil with the lime juice, fish sauce, soy sauce, garlic, chile, ginger and sugar and puree. Season the dressing with salt and pepper.
  2. Place the steak in a ziptop bag and pour half of the dressing in the bag, seal the bag and turn to coat. Refrigerate for 30 minutes or longer.
  3. Heat the grill to medium or heat a grill pan until hot but not smoking.
  4. Grill the steak until the meat is charred outside and medium-rare within, about 5 minutes per side. Transfer to a work surface and let it rest for 5 minutes.
  5. Meanwhile, in a bowl, toss the greens with the cherry tomatoes, cucumber, and onions. Pour the remaining dressing over the salad and toss.
  6. Divide among plates. Slice the steak 1/3 inch thick across the grain and serve alongside the salad.
