Tomato, Basil & Mozzarella Quinoa Bites

Ingredients

Simple Truth Organic™ Olive Oil Spray

½ cup Simple Truth Organic™ Quinoa, dry

1 cup Simple Truth Organic™ Vegetable Broth

¼ cup grated Parmesan cheese

¼ cup shredded mozzarella cheese

2 Simple Truth Organic™ Eggs, beaten

2 tbsp. Simple Truth Organic™ Almond Meal

2 cloves garlic, minced

¼ tsp. salt

½ cup Simple Truth Organic™ Grape Tomatoes, chopped

7 large leaves Simple Truth Organic™ Basil, chopped (about ¼ cup)

Directions
  1. Preheat oven to 350F. Spray a 24-cup mini muffin tin (or two 12-cup tins) with cooking spray and set aside.
  2. In a medium pot, bring quinoa and vegetable broth to a boil. Once boiling, reduce heat low and simmer (covered) for 15 minutes, or until all the liquid has absorbed. Set aside to cool.
  3. In a medium bowl, mix together cooked quinoa, cheeses, beaten eggs, almond meal, garlic and salt. Fold in chopped tomatoes and basil.
  4. Spoon batter evenly into muffin tin.
  5. Bake for 20 minutes.
  6. Serve hot.
