Zesty Black Bean Burgers

¾ cup Simple Truth Natural Old-Fashioned Oats

1-15oz. can Simple Truth Organic® Black Beans, drained

¼ cup Simple Truth Organic® Sweet Corn, drained

¼ cup Simple Truth Organic® Cilantro Leaves, chopped

2 tbsp. Simple Truth Organic® Mild Salsa

1 Simple Truth Organic® Egg, lightly beaten

1/3 cup red onion, chopped

2 garlic cloves, minced

Juice from half a lime

½ tsp. salt

½ tsp. Simple Truth Organic® Ground Cumin 

Pinch of Simple Truth Organic® Ground Cayenne Red Pepper

  1. Add oats to a food processor and process until mixture is coarsely ground. Set aside.
  2. In a medium bowl, mash black beans with a fork, leaving some beans whole. Add oats, corn, cilantro, salsa, beaten egg, red onion, garlic, lime juice, salt, cumin and cayenne and stir until well combined.
  3. Form mixture into four patties and refrigerate mixture for at least thirty minutes.
  4. Heat a large pan sprayed with olive oil spray over medium heat. Once hot, cook burgers for 7-8 minutes, or until browned. Flip and cook for 5-7 more minutes.

This is a wonderful recipe, although I mashed the beans and corn together thoroughly, not leaving any whole. I added a little minced jalapeno and left out the cilantro, which I'm allergic to. With those changes, I rate it 5 stars.
