1 whole Simple Truth® Organic Chicken

4 Tbsp. Simple Truth® Organic Unsalted Butter, softened

2 Tbsp. Simple Truth Organic® Baby Dill, roughly chopped

1 lemon, cut into wedges

Salt and pepper

  1. Preheat the oven to 400° F.
  2. Remove the chicken from the packaging. Rinse the chicken and dry it very well with paper towels, inside and out. Place on a roasting sheet.
  3. Combine the butter and dill. Using your hands, separate the skin from the meat of the chicken. Do this over the breast and thighs.
  4. Take a handful of the butter and spread it underneath the skin. Spread any extra butter on the outside of the bird.
  5. Place the cut lemons inside the cavity of the bird. Season the outside with salt and pepper.
  6. Place the chicken in the oven and cook for 45 to 60 minutes. When the meat is firm and the thermometer measures the temperature of the chicken at 165° F, the chicken is done.
  7. Remove from the oven and let rest 5 to 10 minutes before carving.
  8. After you slice the chicken, spoon the extra juices released during cooking over the meat, and finish with a squeeze of the roasted lemons.
  9. Serve hot. Refrigerate any leftovers.
